Avalakki/Poha (Salted)

Avalakki Poha (Salted)

Cooking time: 25 mins
Ingredients to make Avalakki/Poha (Salted)
1)200g medium avalaki/poha/flattened rice.
2)½ medium size Capsicum.
3)½ cup of green peas.
4)½ medium size onion (optional).
5)½ lemon.
Seasoning:
1)¼ tsp haldi (turmeric powder).
2)Pinch of hing (asafotedia).
3)½ tsp jeera (cumin seeds).
4)½ tsp sesame seeds.
5)1 sprig kadi patta (curry leaves).
6)2 green chilies/red chilies.
7)2 tbsp oil.
8)2 twigs of coriander leaves and salt to taste.
Directions to make Avalakki/Poha (Salted):
1)Wash and moisten the poha with cold water by putting in a bowl and holding under a slow running tap.
2)Mix the poha by hand. Drain excess water and keep aside.
3)Soak it for 3-5mins only (take care not to soak too long or the poha would turn pasty).
4)Heat the oil in a fry pan till medium hot and add the hing, sesame seeds, cumin seeds and let them crackle for a few seconds.
5)Add the turmeric powder and curry leaves and fry for a few seconds.
6)Add red/green chillies and fry for a few seconds.
7)Add the chopped vegetables and lower the heat and cook for 2 minutes.
8)Now add the avalakki that was kept aside (ensure all the excess water is drained).
9)Add salt and lemon juice to taste and stir the contents of the fry pay so that the yellow color of the turmeric is spread evenly on the poha.
10)Cover and cook for 5 min on low heat.
